Celebrate Cinco de Mayo With Bigelow Tea!

Pomegranate Pizzazz is a day to join in revelry! While this spirited holiday honors Mexico’s win against French forces at the battle of Puebla in 1862, it has become a very popular holiday in America since the 1960’s and has grown into a celebration of pride.  There are now enormous Cinco de Mayo festivals held yearly in cities such as Chicago, Portland, and Denver (around 400,000 people tend to show up!).

Of course, indulging in food and drink is an extra fun part of this special day, so turn to Bigelow Tea for your celebrations! In fact, make a toast with these amazing margarita recipes – absolutamente delicioso!

Ultimate Pomegranate Margarita

Become known amongst friends as the margarita master when you mix up this outrageously delicious drink that features fruity herbal tea!

Ingredients

  • 6 ounces (180mL) boiling water
  • Bigelow Pomegranate Pizzazz Herbal Tea Bags
  • 1 ounce (30mL) white tequila
  • 1 ounce (30mL) lime juice
  • 1 ounce (30mL) Cointreau
  • 1 teaspoon (5mL) sugar
  • 10 ice cubes
  • 1 small pomegranate (seeds used for garnish)

Instructions

Pour boiling water over Bigelow Pomegranate Pizzazz Herbal tea bags. Let steep 3-4 minutes. Remove bags and chill. Place chilled tea in blender with remaining ingredients and ice cubes; blend until mixture turns to slush. Garnished with pomegranate seeds (optional).

Virgin Pomegranate Margarita

If you want to get in the spirit of Cinco de Mayo celebrations but tequila isn’t your thing, you can still drink with the best of them when you sip this fab virgin margarita- it’s perfect for kids, too!

Ingredients

For a Frozen Margarita – see directions below:

  • Ice Cubes
  • Orange slices for garnish

Instructions

Boil water and pour over 6 Bigelow Pomegranate Herbal tea bags. Let steep 3-4 minutes. Remove tea bags. Add orange juice, lime juice and sugar. Stir well. Serve warm. To make a Frozen Pomegranate Margarita follow the above directions (using the same ingredients) instead of serving warm, chill. Place in blender with ice cubes and blend until mixture turns to slush. Serve with an orange garnish.

We are thrilled to offer so many fall-themed flavors in our tea repertoire. As well as being a delight to sip, autumn-inspired teas are truly tasty when incorporated into recipes. We wanted to share this menu for a complete harvest-themed dinner that brings in all the savory flavors of the season and celebrates this wonderful time of year.

Pomegranate Cosmopolitan

Toast to fall fun with the luscious taste of pomegranate. This deliciously tangy fruit is at its peak during the fall harvest and makes a fabulous flavor for a fall cocktail.

Ingredients

Instructions

Place tea bags into measuring cup and add boiling water. Let steep for 10 minutes. Remove tea bags, add sugar and blend well. Refrigerate until cold. For one drink: Pour 2 ounces of the cooled sweetened tea, 1 ounce vodka, 1 teaspoon lime juice and ½ ounce Triple Sec into a shaker filled with ice. Shake and strain into serving glass.

Roast Loin of Pork with Spiced Apple Cider Apples

Enjoy this succulent yet hearty dish that features the festive zest of spiced apples.

Ingredients

  • 3 ½ cups (975mL) boiling water, divided
  • 1 box Bigelow Apple Cider Herbal Tea Bags
  • 2 ½ lb. (1kg) pork loin roast
  • 1 clove garlic, sliced
  • ¼ cup (50 mL) olive oil
  • 2 bay leaves
  • Salt and pepper
  • Apple Garnish:
  • 4 large firm cooking apples, peeled and cut into slices
  • (example: Fuji, Granny Smith, Cortland)
  • 1 cup (250mL) reserved (from above) Bigelow Apple Cider Herbal Tea
  • 2 tablespoons (30mL) brown sugar

Instructions

Boil water and add 20 Bigelow Apple Cider Herbal tea bags. Let steep for 5-8 minutes. Remove bags by squeezing well and discard. Make slits in the roast and insert garlic slices. Combine 2 ½ cups (625mL) Bigelow Apple Cider Herbal Tea with olive oil, bay leaves and salt and pepper in a large plastic bag, add pork roast and marinate for 8 hours or overnight in refrigerator. Refrigerate 1 cup (250mL) reserved Bigelow Apple Cider Herbal Tea for Apple Garnish. When ready to roast pork, preheat over to 350ºF (180ºC). Remove meat from marinade, place meat in roasting pan and put into oven and roast for approximately 60 minutes or until meat is no longer pink inside and thermometer reads 160ºF (71ºC). Meanwhile, prepare apple garnish by combining reserved 1 cup (250mL) Bigelow Apple Cider Herbal Tea and brown sugar, place in large skillet, add apple slices and cook on medium heat until liquid has reduced and apple is tender and flavored with tea. Serve slices of pork with apple garnish.

Mashed Acorn Squash with Apple Cider Herb Tea

Squash is in abundance during autumn—take advantage of it at its peak in this tasty side dish.

Ingredients

  • Non-stick cooking spray
  • 1 cup hot water
  • Bigelow® Apple Cider Herbal Tea Bags
  • 4 lbs. acorn squash (about 4 medium or 2 large), cut in half and seeds removed
  • ¼ cup packed brown sugar
  • 3 to 4 tablespoons unsalted butter
  • 1 teaspoon salt

Instructions

Preheat oven to 400º and place oven rack on middle setting. Spray a baking sheet with non-stick cooking spray and arrange the acorn squash cut-side down on the pan. Bake for 40 minutes, or until flesh is soft. Allow to cool for approximately 15 minutes or until cool enough to handle. Meanwhile, combine hot water and tea bags and allow to steep for 5 minutes. Thoroughly squeeze tea bags and discard. Set aside. Using a spoon, scoop out the flesh of the acorn squash and place in large bowl. Mash with a fork. Add ½ cup of the tea, brown sugar, butter and salt, and stir to combine, making sure the liquid is absorbed. Add more tea (1 tablespoon at a time) if the puree is too stiff. Check seasonings, and add more salt if necessary. Serve hot.

Salted Caramel Rice Pudding

Ingredients

  • 1 cup White Rice
  • 2 cups Water
  • Bigelow Salted Carmel Tea Bags
  • 2 cups Milk
  • 2 Tablespoons Heavy Cream
  • 1 Tablespoon Salted Butter
  • Pinch Of Salt
  • 8 ounces Sweetened Condensed Milk, More If Needed
  • Dash Of Ground Cinnamon
  • 1 Tablespoon Vanilla Extract
  • 1 whole Egg, Beaten
  • Caramel Sauce

Instructions

Steep your 2 bags of Bigelow Salted Caramel Tea in the 2 cups of water.
In a medium saucepan or pot, combine the rice, tea steeped water, milk, cream, butter, and salt. Bring it to a gentle boil, then cover the pot, reduce it to low, and simmer for 20 to 25 minutes, stirring twice during this stage.
Remove the pot from the stove and add the sweetened condensed milk, and cinnamon.
Return to low heat for 5 minutes to finish cooking.
Remove the pot from the stove and slowly drizzle in the beaten egg, stirring constantly.
Serve immediately in a small bowl. Drizzle with a little store bought caramel sauce and a sprinkle of salt to really put it over the top.

That’s why iced tea combinations are so much fun. Here are a few of our favorite thirst-quenching iced tea pairing recipes:

These are the combinations we’d recommend, but we wanted to hear from you, too. That’s why we asked Bigelow Tea fans to vote for their favorite iced tea pairings, and wouldn’t you know… they responded by the thousands! The I Love Lemon and English Teatime combination won first place with 2434 votes, followed closely by Perfect Peach and Pomegranate Pizzazz with 2264 votes. Other popular choices were Green Tea and Wild Blueberry Acai, and Pomegranate Pizzazz and Green Tea with Pomegranate. Don’t forget to check out the video above, too, where third generation president and CEO Cindi Bigelow makes a glass of Red Raspberry and Jasmine Green iced tea. Another great option comes from Bigelow enthusiast @CallMeTeff, who suggests combining Earl Grey and “Constant Comment®” over ice. Yum… we’re getting thirsty with just hearing all these flavor combos!

Try these great recipes at your barbecue

Colorful Grilled Tofu Sandwiches

Ingredients:
6 Bigelow® Pomegranate Pizzazz Herbal Juice Tea Bags
¾ cup (180mL) boiling water
1lb (500g) firm or extra firm Tofu, drained and cut into 8 slices
2 cups (500mL) baby lettuce or spinach
¼ cup (60mL) balsamic vinaigrette
8 slices whole grain bread
Mustard and mayonnaise if desired
¾ cup (180mL) roasted red peppers, drained
4 slices Swiss cheese

Instructions:
Place Bigelow® Pomegranate Pizzazz Herbal Juice tea bags in a measuring cup and add boiling water. Let steep for 5 minutes. Remove tea bags and reserve ½ cup (125mL) tea.

Place tofu into a large dish, pour tea over and marinate for ½ hour, turning once or twice.

Preheat grill and grill tofu turning once after five minutes, cooking both sides for five minutes.

Prepare sandwiches by tossing greens with vinaigrette. Spread 4 slices of bread with mayonnaise and/or mustard, 2 slices of tofu, ¼ of the greens, ¼ of the red pepper and a slice of cheese, cover with another slice of bread. Continue until you have 4 sandwiches.

Yield: Serves 4 – Prep Time: 15 minutes – Cook Time: 10 minutes

Grilled Lemon Portobello Mushrooms

Ingredients:
6 large Portobello mushrooms
8 Bigelow® I Love Lemon Herbal tea bags
1 cup (250mL) boiling water
3 tablespoons (45mL) fresh coriander, chopped
Salt and pepper to taste
1 cup (250mL) extra-virgin olive oil

Instructions:
Clean mushrooms with a soft brush and remove stems. Set aside.
Place 8 Bigelow® I Love Lemon Herbal tea bags into a measuring cup and pour boiling water over tea bags. Let steep for 5 minutes. Remove tea bags.
Mix together tea, coriander, pepper and salt and gradually whisk in olive oil.
Place mushrooms in a zip lock bag and pour marinade over mushrooms. In refrigerator, let marinade for up to 24 hours.
When ready to grill, place mushrooms on preheated grill and cook 8 to 10 minutes per side or until tender, basting frequently with reserved marinade.
Slice mushrooms and place on salad greens, or serve as an appetizer.
They also go very well with steak.

Yield: Serves 6 – Prep Time 10 mins. – Marinating Time 24 hrs – Cook Time 8-10 min

Pomegranate Yogurt Dip and Fresh Fruit

Pomegranate Yogurt Dip and Fresh Fruit

Ingredients:
1 cup (250mL) plain yogurt (non-fat yogurt not recommended)
¼ cup (60mL) boiling water
4 Bigelow Pomegranate Pizzazz® Herb Tea bags
3 tablespoons (45mL) powdered sugar
Chopped dried cranberries for garnish (optional)

Instructions:
Pour boiling water over Bigelow Pomegranate Pizzazz® Herb Tea tea bags. Let stand for 10 minutes.

Mix yogurt and powdered sugar. Add 4 tablespoons (60mL) tea mixture and stir well.

Place in an attractive bowl and garnish with cranberries (if desired).

Place a variety of fruit such as pineapple, kiwi, mango, papaya and bananas around the dip.

Yield: Serves 4. Prep time: 10 minutes – Cook Time: 10 minutes.
